L\u2019altro Hong Kong<\/strong>\u00a0located at L Place, Central will be launching the\u00a0anticipated menus paying homage to the \u2018holy grail of gastronomy\u2019 \u2013 \u2018Alba White Truffle Season<\/strong>\u2019\u00a0by\u00a0two Michelin-star Chef Philippe Leveille<\/strong> on September 30, 2015<\/strong>.<\/p>\n

Two Michelin-star Chef Philippe Leveille<\/figcaption><\/figure>\n

Two Michelin-star Chef Philippe Leveille<\/strong> is personally sourcing finest white truffles from Italy’s Piedmont region for his annual gastronomic tribute to the world\u2019s rarest and most expensive delicacy at L\u2019altro Hong Kong<\/strong>.\u00a0This influential chef\u00a0has been\u00a0joining this year\u2019s hunt with trained dogs in the forests of Alba to ensure the prized \u2018white gold\u2019 served to Hong Kong gourmets is of the very highest quality.<\/p>\n

Chef Leveille is closely connected to the hunters from over two decades at the helm of his flagship restaurant Miramonti L\u2019altro<\/em> in neighbouring Lombardy \u2013 which has remarkably retained two-Michelin stars for 15 consecutive years.<\/p>\n

\u2018Alba White Truffle Season’ Menu<\/strong><\/p>\n

The traditional farmhouse truffle marriage is with egg and Chef Leveille is serving three variations on the authentic theme: with Slow-cooked Egg & Crispy Parmigiano Reggiano Fondue<\/em>; in a simply old-fashioned serving with Two \u2018Sunny Side\u2019 Fried Eggs<\/em>; and shaved onto Creamy \u2018Egg in Shell\u2019<\/em>, with a sprinkle of chives.<\/p>\n

White Truffles with All\u2019 Albese Raw Beef Tartare<\/figcaption><\/figure>\n

Appetisers on the culinary opera extend to white truffle \u2018All\u2019 Albese Raw Beef Tartare<\/em>, prepared according to local Alba tradition with hand-chopped dry-aged raw beef, served with pickled cucumber, roasted brown onion, parsley and raw egg yolk; while Roasted Scallops <\/em>with<\/em> Cauliflower<\/em>; and Asparagus in Light Garlic Sauce with Anchovies<\/em> enhance the exceptional flavours of white truffles.<\/p>\n

The most traditional white truffle recipes of all accompany pasta or risotto, and three interpretations are found on this year\u2019s menu, headlined by Miramonti L\u2019altro Risotto<\/em>, one of the most famous dishes served at his 2-Michelin Star restaurant in Brescia. \u00a0The simple handcrafted Tagliolini with <\/em>B<\/em>utter<\/em> is an opportunity to savour white truffles at its purest and heartiest, while the shavings take old-fashioned Spaghetti Carbonara with Italian Cured Pork Cheek & Pecorino Cheese<\/em> to a heavenly new dimension.<\/p>\n
