Mackerel Curry<\/b> <em>(4 servings)<\/em><\/p>\n<table cellspacing=\"0\" cellpadding=\"0\">\n<tbody>\n<tr>\n<td valign=\"top\">\u00a0<strong>Ingredients:<\/strong><\/td>\n<td valign=\"top\">\u00a0<b>Method:<\/b><\/td>\n<\/tr>\n<tr>\n<td valign=\"top\">\n<ul>\n<li>\u00bd cup cooking oil<\/li>\n<li>1 sprig fresh curry leaves<\/li>\n<li>425 g tin Ayam Brand\u2122 mackerel in tomato<\/li>\n<li>sauce<\/li>\n<li>1 tomato, quartered<\/li>\n<li>2 okra\/ladies fingers, diced<\/li>\n<li>1 small brinjal\/eggplant, diced<\/li>\n<li>\u00bc cup tamarind juice<\/li>\n<li>200 ml Ayam Brand coconut milk<\/li>\n<li>salt and pepper<\/li>\n<\/ul>\n<p><b>Spice Paste<\/b><\/p>\n<ul>\n<li>5 shallots<\/li>\n<li>4 cloves garlic<\/li>\n<li>2 cm piece ginger<\/li>\n<li>2 tablespoons Ayam Brand\u2122 fish curry powder<\/li>\n<\/ul>\n<\/td>\n<td valign=\"top\">\n<ol>\n<li>In a blender, mix the spice paste ingredients\u00a0until fine.<\/li>\n<li>In a large pot, heat the oil and stir fry\u00a0the curry leaves. Then add in the spice paste\u00a0ingredients from the blender.<\/li>\n<li>Add tomatoes, okra\/ladies fingers and brinjal\/eggplant. Stir gently. Then add the tomato\u00a0sauce from the tin of mackerel, tamarind juice\u00a0and half of the coconut milk and season to\u00a0taste.<\/li>\n<li>For a rich curry, simmer longer to allow\u00a0the gravy to thicken. Then add the mackerel\u00a0and the balance of coconut milk to retain\u00a0the coconut aroma.<\/li>\n<li>Allow to simmer for\u00a0another 2-3 minutes and stir it gently, so as\u00a0not to break the mackerel.<\/li>\n<li>Garnish with sliced chillies, and serve\u00a0with warm rice.<\/li>\n<\/ol>\n<\/td>\n<\/tr>\n<\/tbody>\n<\/table>\n<p><b>5. Mackerel Wanton <\/b><em>(4 servings)<\/em><\/p>\n<table cellspacing=\"0\" cellpadding=\"0\">\n<tbody>\n<tr>\n<td valign=\"top\">\u00a0<strong>Ingredients:<\/strong><\/td>\n<td valign=\"top\">\u00a0<b>Method:<\/b><\/td>\n<\/tr>\n<tr>\n<td valign=\"top\">\n<ul>\n<li>12 Wanton Skin<\/li>\n<li>1 Can 155g Ayam Brand Mackerel, drained and mashed<\/li>\n<li>1 shallot, chopped finely<\/li>\n<li>1 egg<\/li>\n<li>2 tablespoons Chinese parsley, chopped<\/li>\n<li>1 teaspoon rice flour<\/li>\n<\/ul>\n<\/td>\n<td valign=\"top\">\n<ol>\n<li>Mix the mackerel with shallots, egg, Chinese parsley and rice flour<\/li>\n<li>Heat oil for deepfrying.<\/li>\n<li>Place a teaspoon of filling in the middle of the wanton and fold into a triangle, brush the sides with beaten egg to seal the skin.<\/li>\n<li>Deep fry in oil and serve immediately.<\/li>\n<\/ol>\n<\/td>\n<\/tr>\n<\/tbody>\n<\/table>\n<p><b>6. Add in carrot and fry for 1 minute.<\/li>\n<li>Pour in 300ml water followed by the seasoning ingredients and bring to boil. Stir in the meehoon and cover to simmer for 5 minutes.<\/li>\n<li>Uncover and stir fry till meehoon is just cooked and all liquid has evaporated, add in peppers and seasoning to taste.<\/li>\n<li>Serve hot with a squeeze of calamansi lime and some fried shallots.<\/li>\n<\/ol>\n<\/td>\n<\/tr>\n<\/tbody>\n<\/table>\n<p><b>8. Flatten\u00a0the bread slices into each mould and trim\u00a0the edges. Preheat oven to 180\u00b0C.<\/li>\n<li>Mix the tuna with the rest of the ingredients,\u00a0then fill the bread cups. Tuna Coconut Serunding<\/b><\/p>\n<table cellspacing=\"0\" cellpadding=\"0\">\n<tbody>\n<tr>\n<td valign=\"top\">\u00a0<strong>Ingredients:<\/strong><\/td>\n<td valign=\"top\">\u00a0<b>Method:<\/b><\/td>\n<\/tr>\n<tr>\n<td valign=\"top\">\n<ul>\n<li>2 cans Ayam Brand Flakes Spicy Tuna in Olive Oil (with oil)<\/li>\n<li>200g fresh grated coconut (white part only)<\/li>\n<li>\u00bd tbsp turmeric powder<\/li>\n<li>150 ml of water<\/li>\n<li>50g soft brown sugar<\/li>\n<li>Salt to taste<\/li>\n<\/ul>\n<p><strong>To Blend:<\/strong><\/p>\n<ul>\n<li>60g shallots<\/li>\n<li>3 red chillies<\/li>\n<li>2 stalks lemongrass<\/li>\n<li>100ml corn or sunflower oil<\/li>\n<\/ul>\n<\/td>\n<td valign=\"top\">\n<ol>\n<li>Toss coconut with turmeric powder and fry it in a wok without oil until almost dry. Remove and set aside.<\/li>\n<li>In the same wok, cook blended ingredients over medium heat until oil breaks surface. Add in tuna and olive oil, 150 ml water and sugar, cook until sugar dissolves.<\/li>\n<li>Next add in fried coconut, season with salt if needed, and continue to fry over medium heat until the mixture is dry.<\/li>\n<li>Cool and serve with hot white rice or buttered white bread.
